Cabbage chapathi roll

This simple recipe is  grate for lunch box and it is really very quick and easy



Ingredients:
 
   Cabbage sliced thinly 2 cups
   Carrot 1 sliced thinly
   Beans few chopped finely
   Onion chopped finely
   Garlic 2 cloves chopped
   Green chili chopped finely
   Chilli powder 1 tsp
   Turmeric powder 1/2 tsp
   Cumin powder 1/2 tsp
   Coriander powder 1 tsp
   Salt and Oil
   Green chutney(coriander or mint chutney)

  For Chapathi:
  Wholemeal wheat Flour 2 cups
  Luke warm water 1 cup
  Salt 1/2 tsp
  Oil 1tsp
  Mix flour water salt together knead them until it becomes soft knead it into a ball coat the dough with oil keep it aside
   Make into small balls  roll them into small disk cook them on both sides in a a hot pan
   when the chapathi are cooked keep it in a basked cover it with a cloth
  

Method:



  • Heat a pan with oil add chopped garlic onion chili
  • Add the veg and all the powder fry them for a minute sprinkle some water cook them until all the vegetable are soft enough
  • Now take one chapathi Spread some chutney over it place some cabbage fold it on both sides and then roll the chapathi over 
  • Preheat the sandwich maker, keep the rolls inside for 2 minutes
  • Serve it hot or it is great for kids lunch box 

Flour less almond meal chocolate cake

Ingredients:

  1.    Almond meal   200gm
  2.   Dark chocolate  200gm
  3.   Butter 200 gm
  4.   Eggs 4 large free range
  5.   Brown sugar 330 gm
  6.   Coco powder 25gm+1 tsp
  7.   Water 80 ml


Method:


  •   Preheat the oven to 180 degrees
  •   Prepare a baking pan lined with baking paper
  •   Separate egg whites from yolk whisk the whites in a separate bowl until it has soft peaks
  •   In a pan take dark chocolate ,butter ,coco powder ,water combine them over low heat,cook ,stirring for 3 mins or until the mixture is smooth transfer them to a large bowl 
  • Add the egg yolk,sugar and almond meal and stir to combine
  • Add half of the egg white to the chocolate mixture and gently fold to combine.add the remaining egg white and gently fold to combine 
  • Pour into prepared pan ,bake for 45-50 minutes or skewer inserted in the center comes out clean
  • Set aside to cool completely
  • Serve it with  coco powder

  

French Toast




Ingredients:
   Soft white bread slices 4
   Eggs  2
   Milk 1/2 cup
   Sugar 1 tbsp + 1 tsp
   Butter  2 tbsp
   Vanilla extract 1/2 tsp


Method:

 In a large bowl beat the egg along with milk and sugar add vanilla extract mix them all together
 Take a slice of bread soak them in mixture ,meanwhile heat a pan add 1 tsp of butter when the butter start to melt place the slice over it cook them until brown and another tsp of butter flip the bread toast the other side sprinkle some sugar while it is hot ,serve it hot 

Oats and chia porridge

Ingredients:

  •      Oats 1cup
  •     Chia seeds 2 tsp
  •     Milk 1 cup
  •     Water 1/2 cup
  •     Almonds 3 chopped finely
  •     Raisin for seving

Method:
  In microwave safe bowl, add oats,chia seeds,milk and water mix them together microwave  high for 3 minutes 
  serve them in  bowl with chopped almond and raisin 
   

Beet root rice

Ingredients:

  1.  Beetroot 2 medium size peeled and grated
  2.  Onion 1 medium size
  3. Tomato 1 medium size
  4. Green chili 4 nos
  5. Basmati rice 2 1/2 cups
  6. Ginger 1 cm piece/garlic 4 nos blended to smooth paste
  7. Mint and coriander leaves few chopped
  8. Yogurt 2 tbsp
  9. Oil 2 tbsp
  10. Ghee 1 tbsp
  11. Cinnamon 1cm piece,Cardamon 2 pods,Bayleaf 1.Clove 2 nos,Fennel seeds 1 tsp

Method:

  • Wash and soak basmati rice in 4 cups of water
  • Chop Onion and Tomato,split the chilies
  • Heat a cooker with oil and ghee add cinnamon,caradamon,bayleaf ,cloves,and fennel seeds saute them for 1 minute 
  • Now add chili and onion fry them until onion turns golden brown now add ginger and garlic paste fry them until raw smell goes off
  • Add tomato and salt cook it until  tomato becomes soft
  • Now add the grated beetroot mix it well in the masala once after mixing it well add the soaked water and bring it to boil add the rice cover the lid  and cook it for 2 whistle
  • Serve it with cucumber and tomato raitha


Vegetable balls

Ingredients:
  •   Potato 1 boiled,peeled and grated
  •   Carrot  peeled,steamed and grated
  •   Frozen peas and corn thawed 1 cup
  •   Onion 1 small chopped finely
  •   Coriander leaves chopped finely
  •   Garlic 1 clove finely chopped
  •   Green chili 1 finely chopped
  •   Salt
  •   Plain flour 2 tbsp
  •   Bread crumbs 4 tbsp
  • oil for shallow fry
Method:
  1.  Pat all the vegetables dry with clean tea towel 
  2.  Now mash all the vegetables with salt 
  3.  Add onion,coriander,garlic mix them all together and roll them into balls
  4.  Now take two separate bowls one with flour and another with bread crumbs
  5.  Roll the veg balls first in the flour and then in bread crumbs
  6.  Heat a pan with enough oil and fry the veg balls one by one
  7.  Serve it with any sauce  
  

Banana and strawberry smothie

If you have any ripened  banana find no one to eat it then this recipe is for you
Peel the banana keep it in the freezer  and use it whenever you want to make smothie
Ingredients:
   For 1 cup(Approx 250 ml)

  1.    Frozen banana half sliced
  2.    Strawberries 2
  3.    Dates 2 chopped
  4.    Oates 2 tbsp
  5.    Skimmed milk 200 ml
  • Blend them all together in a blender to make our smoothie
