Beet root rice

Ingredients:

  1.  Beetroot 2 medium size peeled and grated
  2.  Onion 1 medium size
  3. Tomato 1 medium size
  4. Green chili 4 nos
  5. Basmati rice 2 1/2 cups
  6. Ginger 1 cm piece/garlic 4 nos blended to smooth paste
  7. Mint and coriander leaves few chopped
  8. Yogurt 2 tbsp
  9. Oil 2 tbsp
  10. Ghee 1 tbsp
  11. Cinnamon 1cm piece,Cardamon 2 pods,Bayleaf 1.Clove 2 nos,Fennel seeds 1 tsp

Method:

  • Wash and soak basmati rice in 4 cups of water
  • Chop Onion and Tomato,split the chilies
  • Heat a cooker with oil and ghee add cinnamon,caradamon,bayleaf ,cloves,and fennel seeds saute them for 1 minute 
  • Now add chili and onion fry them until onion turns golden brown now add ginger and garlic paste fry them until raw smell goes off
  • Add tomato and salt cook it until  tomato becomes soft
  • Now add the grated beetroot mix it well in the masala once after mixing it well add the soaked water and bring it to boil add the rice cover the lid  and cook it for 2 whistle
  • Serve it with cucumber and tomato raitha


Vegetable balls

Ingredients:
  •   Potato 1 boiled,peeled and grated
  •   Carrot  peeled,steamed and grated
  •   Frozen peas and corn thawed 1 cup
  •   Onion 1 small chopped finely
  •   Coriander leaves chopped finely
  •   Garlic 1 clove finely chopped
  •   Green chili 1 finely chopped
  •   Salt
  •   Plain flour 2 tbsp
  •   Bread crumbs 4 tbsp
  • oil for shallow fry
Method:
  1.  Pat all the vegetables dry with clean tea towel 
  2.  Now mash all the vegetables with salt 
  3.  Add onion,coriander,garlic mix them all together and roll them into balls
  4.  Now take two separate bowls one with flour and another with bread crumbs
  5.  Roll the veg balls first in the flour and then in bread crumbs
  6.  Heat a pan with enough oil and fry the veg balls one by one
  7.  Serve it with any sauce  
  

Banana and strawberry smothie

If you have any ripened  banana find no one to eat it then this recipe is for you
Peel the banana keep it in the freezer  and use it whenever you want to make smothie
Ingredients:
   For 1 cup(Approx 250 ml)

  1.    Frozen banana half sliced
  2.    Strawberries 2
  3.    Dates 2 chopped
  4.    Oates 2 tbsp
  5.    Skimmed milk 200 ml
  • Blend them all together in a blender to make our smoothie


Pumpkin Chips

Its simple and easy chips and it is healthy snaks

Ingredients:
  Pumpkin Quartered ,peeled,sliced
  Olive oil 2 tbsp
  Salt
Method:
  Preheat the oven to 200 degree 
 In baking tray line it with baking paper ,arrange sliced pumpkin
 Sprinkle olive oil and salt  over it and then bake it for 20 minutes
 Now our chips is ready

Veg patty

This protein rich crispy patty is easy and healthy snacks for kids
Ingredients:
  1.   Four beans can 1
  2.   Soy chunks few cooked in hot salt water
  3.   Potato 1 boiled peeled and mashed
  4.   Plain flour 1 tbsp
  5.   Onion 1 small chopped finely
  6.   Coriander leaves chopped
  7.   Garlic 2 cloves chopped finely
  8. Salt and Chili flakes
  9.    Oil for shallow frying

Method:
  •    Drain the beans from the can pat them dry and mash them
  •    Now drain the soy chunks mash them with the beans
  •   Add the mashed potato and salt mix them all together
  •   Now add chopped onion ,garlic,chili flakes mix it well
  •   Made a small ball and slightly press them between the hands to make a patty
  •   Take a plate with little flour 
  •   Pat the patty on the flour on both sides 
  •   Heat a pan with little oil  fry them on both sides until golden brown
  •  Serve it  with tomato sauce 


Egg and sprouts

I read this recipe in Sanjeev Kapoor's Wrap and Roll Book .This way of eating Egg and Sprouts is Interesting!
Ingredients:

  1.    Egg 1 beaten
  2.    Mixed sprouts 1 hand full
  3.    Onion 1 chopped finely
  4.    Capsicum 2 to 3 slices
  5.    Green chili sliced
  6.    Garlic 1 clove sliced
  7.    Chili flakes  1/2 tsp
  8.    Italian herbs dry 1/2 tsp
  9.    Salt as needed

Method:

  • Separate Chopped onion in to two portions
  • Heat oil in a pan.Add the garlic and onion and saute till translucent.Add the capsicum and saute for a minute.Add the sprouts,dried herbs,Chili flakes and salt mix well
  • Beat the egg with salt,onion and green chili.Add it to the hot pan rotate so that mixture spread evenly.Let the underside cook for a minute.Flip over and cook again.
  • Place the sprout mixture on one side and Fold the other side over and Serve immediately

Baked potato wedges

These wedges are healthy compared to fried one I make this for my kids they love it
 Ingredients:

  1.  Potato 3( washed and cut them into wedges with the skin)
  2. Olive oil 2 tbsp
  3. Salt 1 tsp
  4. Chili powder 1/2 tsp

We need,
Baking tray and baking paper
Method:
  •   Prepare the baking tray line it with baking paper 
  •   Preheat the oven  to 220 degrees 
  •   Line the wedges on the tray sprinkle with olive oil ,salt and chili powder 
  •  Make sure they are coated well and also don't try to overcrowd the potatoes otherwise they don't bake well there should enough place between each wedges
  • Arrange the wedges with skin side down 
  • Bake them for 45 minutes
  • Serve it hot with any sauce
